Those guineas are so loud I don't know what good they are except as a watch dog. I've heard they're not good to eat. Have you ever tasted one?

Guineas are considered a delicacy to eat. It has been many years since I have had guinea to eat and as far as I can remember, it was very good.

Because guineas can set themselves off for reasons only they may or may not know, they aren't really very good as watch dogs. They are reported to be excellent for tick control and can be hilarious to watch while chasing after grasshoppers.

Most people have never tasted Guinea Fowl. What a shame. Some say it resembles chicken with turkey overtones. To me it’s more like a juicy version of pheasant, and since the guinea is dark meat, the flesh really delivers flavor.

As a bonus, broth made from the carcass is intensely rich.
You don’t have to do anything special to show off these qualities. Obtain a three-to-four-pound bird, preferably with a nice amount of bright yellow fat. A handful of garlic, a lemon, rosemary and salt are all you need. An hour in a hot oven will give you a burnished, fragrant roasted hen.

It is a lovely thing to have year-round, but in cold weather it’s especially nice, served with grilled radicchio or roasted root vegetables.

I just candled my eggs. It's day 20, but the eggs look like day 17 embryos. They're definitely not ready to hatch.

I used 3 thermometers and they all said 99.5 degrees, but the temperature must have been lower than that.

Sally, what thermometer did you end up buying?

I have a serious issue with trust! I just bought 4 more different ones!!

Actually, they can jump fairly high. The one in the picture managed to jump over a 12 in. wall. I was shocked!
