Is the smaller low end dickey with a wafer thermostat worth the money?

I'm not sure what you mean by the smaller Dickey. I have the 2x2 myself, but got it with the electronic thermostat.

I think you could incubate and hatch just fine using the wafer thermostats once you have them set properly. Folks have been using the wafers for decades now with good success.

Even if you don't get the electronic thermostat if at all possible I would get the Plexiglass door. Being able to see everything inside is a great boon.
