Wow! 12 pages to read! Sucks I woke up new years day with a pounding headache and a broke phone so I can't keep updated at work. My favorite pickled eggs is just putting them in cherry pepper brine after eating the peppers. I can't seem to peel fresh boiled eggs either, and I've tried many ways. Someone suggest poking a hole in the air pocket side and it loosens the shell, have to try it. deb, I took three years of Spanish in highschool and tried flan a few times, it is super delicious.
Someone asked about good laying ducks, Khaki Cambells lay more eggs than any chicken. I had one, and then a Campbell/Mallard cross that was a super good setter. One time she hatched out 22 ducklings.

Metzer farms has a breed that is supposed to lay three hundred eggs a year....

OK here is an excellent article about feather sexing explaining why they really cant identify the exact breeds that feather sexing works on....

toward the bottom they show actual photos of the wingtips that are shown in the diagram I shared. They also talk about the cross that can be feather sexed.

It seems you have to cross one breed that feathers early and one breed that feathers later....

"Another sex-linked characteristic that is used commercially in the United States is the rapid-feathering, or fast-feathering, gene. A rapid-feathering male is crossed with a slow-feathering female (see Figure 6). The resulting males will be slow-feathering, while the females are rapid-feathering. As a result, the males have wing feathers that are relatively shorter than those of the females. In the females, the covert feathers are always shorter than the primary feathers. In the males, the covert feathers are always as long as, or longer than, the primary feathers (see Figure 7). Some training is required to develop accuracy and speed in sexing on the basis of wing-feather length. However, the amount of training is considerably less than that required for vent sexing."

A flat edge spatula is near useless for flipping anything but pancakes. For eggs try one or two silicone spatulas instead and cradle them over.

Agreed on the puppies.... They're composed of 95% piddle.

Bacon lovers:
Took a charcuterie course last year. Bacon was the easiest thing to make! Honestly, if you can butter bread you can make bacon.
Don't ever think I'll make bologna again...it's basically a meat milkshake.

I can flip them about fifty percent of the time. Even better if I dont "think" about it... I kind of set myself up for failure... LOL.

Bologna and Hotdogs are in the same category for me... Though I will eat Kosher hot dogs.

If I could obtain Blackeyed peas fresh I would have them once a week. But the stores here dont carry them. I have heard when they are in season you can go to the farmers market .... I buy them a lug at a time if they have them.

I would love to take a Charcuterie course.... Making sausage and pastrami and Corned beef would be awesome.... I understand making un cased sausage is very simple... as in breakfast sausage or Italian sausage.... I would alos love to learn how to do it in casings for freezing.... and or the dry hard kind that you hang for months till the mold cures it.
