bison bulls weigh up to 2000 lbs
Bison cows weigh up to 1100 lbs

I looked it up and dressed out with bones the yield is 75 percent of live weight.

So
for a bull you get 1500 lbs
for a cow you get 850 lbs

but it doesnt work like that
BISON EXAMPLES:
Young bison, 900 lbs, heart-lung shot; boneless cut;
(.55 (dress %) x .55 (carcass cutting yield) x 900 = 272 pounds of meat.

Young bison, 900 lbs., heart-lung shot, bone-in:
(.55 (dress %) x .75 (carcass cutting yield) x 900 = 371 pounds of finished meat product.

Young bison, 900; shoulder shot,boneless cut:
(.55 (dress %) x.46 (carcass cutting yield) x 900 = 227 pounds of meat.

Young bison, 1100 lbs, heart-lung shot; boneless cut;
(.55 (dress %) x .55 (carcass cutting yield) x 1100 = 333 pounds of meat.

Young bison, 1100 lbs., heart-lung shot,bone-in:
(.55 (dress %) x .75 (carcass cutting yield) x 1100 = 454 pounds of finished meat product.

Young bison, 1100; shoulder shot,boneless cut:
(.55 (dress %) x.46 (carcass cutting yield) x 1100 = 278 pounds of meat.

Trophy (old) bison, 2000 pounds, heart-lung; boneless cut:
(.50 (dress %) x .55 (carcass cutting yield) x 2000 = 550 pounds of meat

You shoulda looked up the preserve I'm going to and the 3 year meat cows they offer.
