We have wild white sage at higher elevations but my Native American friend says any sage will do as long as you thank the sage plant and bury some tobacco near the roots. I have eighteen acres of sage.... The desert sage isnt so white or fragrant.
Rock salt would big chunks like you use for icecream do?

Not my pic, but long, thin ones on bottom are sweetgrass... your NA friend would know about it, Native Americans actually use it about as much as they use sage, depending on the groups... the smoke from it is sweeter and isn't as overpowering as sage...
As for rock salt, not sure on the ice cream type... I use these...
I think the Pink Himalayan salt slabs that are popular now are same type...
