How does one get the head to fly like that? Do they just chop the heads off the standing birds?

We have a table made out of that similar parasitic mushroom stuff out at the cottage. Ugly as heck, but sort of cool. It's about 2 feet wide, and 2 feet high. The stuff is really hard and woodlike, as it would need to be to be able to make furniture out of it.
