Dixie Chicks

We cooked one up on Friday, and it reminded me of how worth it butchering them it is. Turned out super tasty, perfectly moist and tender. We just heated up the leftovers and had them with some risotto, and that was oh so good.
 
Mini, glad the dog got attention quick and made it thru surgery. Hopefully she will continue to show progress and live a good many more years.:)
 
I have meat rabbits , but I just can't get to the point of slaughtering them , so they live out there lives as pets ? They are now my fertilizer suppliers for my compost pile . I think I might have been given rabbit at one point by my sister .........but I never ask ....looked like chicken so ???
 
I fry mine up in a flour mixture. Like fried chicken

Same here. Wild rabbits and squirrel are good that way also, but I parboil them first so they are more tender, then de-bone, dredge in flour mix and fry. I know I've said this before but when I had a lot of wild rabbit, the front and rear legs make excellent hot wings, save the back loins for stew or pot pies.

We had one rabbit for about ten yrs or more, a big Rex oldest dd showed for 4H. Gave us plenty of fertilizer for the mater plants. I miss it. Trying to convince the wife we NEED meat rabbits for garden fertilizer...She's against it cause she don't think the kids will approve of butchering them. That's why we will need lots of them so they don't notice when some are missing, and don't tell them....Supposed to pick up some American Chinchilla breeders in the spring, hope I can convince the wife soon...Sure could save on feed with rabbits, I have a 40 acre field of new planting alfalfa and clover one step behind our back tree line, and another of timothy mix to the side of us.

Still alive and kicking :) Been busy trying to prevent more duck losses. We've had a night time predator taking our ducks, I highly suspect an owl. I have since moved them out of the duck run into the chicken run (higher fence but smaller run) and have been able to cover it for the most part.

DH is now also working 1000 miles away from me near our new home. 52 days left until I get to follow him out. With dh gone, my work load at home is huge too. I am happy when I get 20 minutes to myself at night.

Work has done more cuts, but for now I still have my job. Last day, Feb 19th, then a week to pack the remainders and clean house.
 
Beer, kids are fine with it, trust me. Our neighbors try to shield their youngest daughter (I think she's about 6 now) a bit from the fact that we eat ours, but the kid keeps saying stuff like "Why don't you kill a chicken and a rabbit to make dinner for yourself and Karin?". So she's pretty fine with it. And she and her mom came over to bring us a Xmas present, so I told the kid that the bunnies are starting to come out from the nest, to which she replied enthusiastically "AND SOON THEY DIE!".
