I love onions and bacon. Sweet caramelized onions mmm, chocolate covered bacon mmm, onion bacon jam? IDK?
I love hot peppers, but that pepper jam...too weird, I don't care much for it.

I use butter to carmelize the onions but bacon grease gives it so much more an adult taste. Carmelized then add just a little suger winds up captureing all that fatty goodness and the oiniony goodness and thickens it. The use it like a topping for meats and veggies...

I have had Jalepenio jam made for the general public and it was awesome... only a little spicy. And that bronco berry stuff they make for RBs jalepenio poppers is off the roof good.

So sweet and pepper go to gether
Chocolate and chiles go to geterh

asian dipping sauces to die for.

I usually don't like strawberry jam that much, but I made strawberry rhubarb jam last summer, and that's been delicious. The tomato jam I tried was less of a success, tastes super weird.

I'm doing Japanese Plum and wild blackberry jelly this spring. I can't wait. A few people have already lined up orders for both. Some of the same people have decided to monopolize all I get.

I do not like rhubarb, which is sad... Grows like a weed up here.
