Do I have to let my freshly butchered rooster sit in the fridge 24hrs if I plan on just making a soup out of him? I know you should if your oven roasting, but would there be any difference if I boiled the meat. Wont it be tender either way?
 
A lot of people don't ever age them, but I find that it not only helps texture but also helps flavor. So yes, I vote for the aging, even if it's being boiled!
 
Yes. I age them an extra 24, in fact.

x2 you can age for up to 5 days, sometimes longer if the health of the bird and the sanitation during processing was very good. What has been suggested to me is aging at least until the joints begin to move freely again after the rigor, usually at least 24hours, often longer with a larger carcass.
