My young hens are pretty quiet unless when they are about to laying. They will sing egg songs or cluck like that. I am curious, for older hens, like > 3 years old, when they no longer lay, do they still cluck?

Yes the older hens still talk and purr and cluck and squawk and screech and .... as far as I can tell, make pretty much all the same sounds as their younger sisters. Do they still sing the "egg song"? I think so, sometimes they will sing along to celebrate when others lay. But you know who I think wiuld REALLY know for sure? A couple of folks who really observe their chickens. I'll tag them.

I have an "older" SS who is becoming quite a pet. She often leaves the flock to hang out by me when I can be outside. She makes a noise like a rusty gate opening. I guess this is to express her pleasure at being with me, or perhaps to ask me how I am doing. It goes something like this: Eeeerrrrrr-uh,uh,uh,uh,uh,uh? With the first part being on a rising note and the "uhs" just being all on the same note. She does this over and over. It's a contented, companionable sound. She's coming 4 years old and seldom lays any more. Her name is Merida, after the red-haired girl in the Pixar movie "Brave." She's always been very curious and independent.
