Can you think of a famous Spanish herb I could add to my recipe in place of basil, to improve it? I'd like to make it purely Spanish?

And do you think it would be good served over chicken?

Oh, yes, a little paprika is just what it needs. Thanks for the suggestion. I wish I had thought of it. That would make it more 'Flamenco' like-- think, hot, hot, hot!

Mexican Oregano would be delicious in it! Wish I'd thought of that. My chickens love to eat my oregano plants.

I just love cilantro! I wish I would have thought to put it in my recipe. Someone said cilantro is more Mexican than Spanish, but I thought it was more Spanish than Mexican? Does anyone know which it is? I believe cilantro is the Spanish word for coriander, but I don't know whether it is used more in Mexican dishes or more in Spanish dishes? Is basil widely used in Spanish dishes (from Spain), or is it used more in Italy than in Spain?:
