Docile chicken breeds

Buff orpingtons 100000%. They're super friendly and mine lay eggs everyday :). Though, I don't recommend a sussex because they tend to be very loud. But another favorite breed of mine would have to be the Black Australorp. My daughter carries one of ours around the yard for hours with no problem. Not to mention they're great layers of brownish pink eggs.
 
For some reason, I've always wanted Box and RIRs, but I may be reconsidering now.
I haven't had RIRs but I have seen over and over again that many of the hatchery birds are aggressive. Of course, there's always the exceptions. Who knows, you might love those breeds. I'd have to side with LG though in terms of good breeds for a mixed flock.

I personally love Leghorns, but agree they don't do well cooped up.

Easter eggers are great for some color.
For white eggs, I have Barred Holland's. They are supper friendly and very curious. Get them from a breeder though, they hatchery stock is tainted.

I would prefer quiet chickens too, but how loud can they be? Another reason why I don' want roosters.

I'd consider loudness to be something that varies bird to bird. I have yet to have a particular breed that's louder or quieter than the others, and I've owned 20+. More if you count varieties of a breed.
