Docile chicken breeds

Hello there! I wanted to suggest some breeds for you, too (sorry if I repeat some breeds other people already recommended; I was too lazy to read through all the comments). =P
Okay, here are my suggestions:
1. Welsummer (dark brown layer/some of them lay eggs with chocolate-colored spots), and they're typically friendly
2. Black Australorp (from what I've read, they're quiet, docile birds that lay lots of large brown eggs)
3. I know you're debating on the Easter Eggers, right?, but I suggest possibly getting two of them (they can be very sweet, and they're pretty good layers of usually nice-looking eggs...and no, EEs are not Ameraucanas or Araucanas)
4. And then I suggest you getting a couple of Polish birds (they lay a fair amount of smaller white eggs, I believe; have crazy head crests, and are typically quiet and friendly, but because their vision tends to get blocked/very limited with the crest--which may need trimming periodically--they can be a little skittish and unpredictable at times)
:)

Ameraucanas and EEs are two different breeds I believe.
Easter Egger is a general title for any bird that lays blue or green eggs and does not fit to a breed standard. There is an identifiable look to the hatchery "Americanas" (Easter Eggers) but it's difficult to explain.

Ameraucana is the name of a specific breed that breeds true.

My plan is to get 2 of each breed I get, so far. Just so I can try them out and see what will work best for me. So far I plan on EEs, gold and silver Wyandottes, and barred rocks. Still considering BOs and possibly speckled sussex.

I' like to get some polish or silkies for the grandchildren as well. Just not sure which breed yet.

I'll look in to the welsummers as well. Does anybody else have any pros and cons with them?

Silkies are generally considered a "special needs" breed. They are very broody.
