Does anyone suffer from Gluten intolerance?

With what colleen went through, you might end up finding out that some of what you were diagnosed with, you don't really have.

She was on strict diet for years that wasnt doing her a bit of good.
Added: (because it wasn't gluten free)
I was so happy when fried food came back on the menue. lol

The symtoms sound more like diabetes to me. Do you have the same problem after eating potatoes? Consult with your doctor.

Thanks, yes ive had diabetes tests, high cholestorol though, I wonder why!!!!!

I'm not a celiac but I have an autism spectrum disorder, so I'm trying to go gluten free-at least at home to see if it will help me with some of the problems I have. Mom's been making me gluten free bread from mixes we get or make, and I love it! Next challenge: gluten free pie dough!
The only issue with gluten free baking is that the dough is so sticky that you almost have to have a bread machine to make it. Also, there's a ton of ingredients for each baked good you want to make..and they are expensive! But I figure good physical and mental health is worth it, especially since I don't have health insurance!
Oh, BTW, you can get gluten free mixes and ingredients from your local health food store. There's also a company called Bob's Red Mill that has gluten free and other baking products that you can order through mail, online, or at regular grocery stores. We use some of their products, which are great!

I had a few of the Bette Hagman cook books that I found helpful, particularly the bread ones. Most other recipes are adaptable enough to not really need a GF book.

One of the things that made this easier to do was to premix some of the baking mixes in large containers, label them, and keep them handy for when something needed to be whipped up quickly. I recall having a pancake mix, several bread mixes, and such. It didn't take too long to figure out which mixes worked well to use in adapting regular recipes that we had used before going GF. I made muffins, cookies, even hot dog and hamburger buns. The best bread I found for those was a recipe by a gal named Chris over at Delphi Forums. She called it a crumpet recipe, but it was actually more like a light white bread recipe. It quickly became my son's favorite for sandwiches.
