Pictures of your coop, run, water and food dishes. Brand and protein content of food. This would be beneficial for us to maybe spot something.
Also what kind of snacks and how often.

If you have pictures of brooder when you had chicks, and if you remember the feed they were eating. Something may stand out.

You said a " high protein" food. Can you tell us what feed and how much protein? (Too much can be just as detrimental as not enough.)

How does their poop look? Blood could signify coccidiosis, pale with undigested food and a nasty smell may be enteritis.

I would be leary of any place that takes back cockerels and replaces them with older pullets. While it sounds like a dream, it isn't a good practice as they can be bringing disease into their flock.
