Hey everyone! We decreased our flock today by 5 roosters and intend to butcher another 4 this wk.

I have always brined my birds before freezing but this time i was curious about allowing them to rest in the fridge dry. My question is do you guys cover your birds with anything (damp cloth etc) prior to placing them in the fridge?
I have done a combo of soaking in salt water for a day and then drying for another 1-2 days but this time I am looking to place them straight in the fridge (mostly due to kack of time and pots).
