Duck Eggs Making Me Sick?

Hi- dealing with the same situation. Had stool tests twice and nothing was found. Not allergic. So it seems likely that the feed I am using is the problem- organic Payback chicken feed (and I add brewers yeast). I am going to try changing the feed, changing their calcium source (oyster shells). Otherwise maybe it is something (plant, bugs, whatnot in the soil) that is involved.

OP sounds like food poisoning. Bacteria can work its way inside the egg before the shell is formed in the duck. You could try cooking the holy hell out of them. Sometimes food poisoning is caused by a toxin the bacteria produces not the bacteria itself. Cooking wont destroy the toxin so you may get sick anyway. If your sickness is vomiting and diarrhoea its likely not allergies. If your symptoms are redness/rash itching trouble breathing ect its possible allergies. Warm water is the proper method to wash eggs, so says the usda. At the same time you want to keep your eggs as clean as possible and i would not eat eggs that are extremely dirty but that's just my preference.

Can you share more about the toxicity remaining despite bacteria being killed by heat? Do you have any scientific references I can check out? I’m curious to learn more since the vet, food safety doctorate and usda consultant we’re confident the only thing I needed to do was ensure the eggs were sufficiently cooked to kill bacteria.

Thank you this was quite helpful. I was unable to find this information just searching the CDC and USDA sites. I’ll be sure to forward this to the individuals I spoke with. I would hope they bring this type of information into further advice they give. They told me just to cook to 165 or greater and I’d be fine- wrong. And boy was it a painful experience to repeat.

Food poison and illness takes 14-16 hours to on set. I'm a chef by trade. Now here's where it gets weird and tricky your body and brain are programed to avoid food it thinks is making you sick. So if for example you had a bad meal the night before and had eggs for breakfast, your brain will associate the eggs with making you sick and will cause you In the future to react to the offender by expelling it quickly so as not to become Ill again. You can really see this in effect with liquor. If you ever been deathly sick from drinking most people can't even stand the smell of what ever liquor they where drinking when it happened.

Just an FYI- there is a form of food poisoning from staph bacteria, actually from a toxin, that begins with a few fours. Usually with 2 hours. The bacteria usually grows within Creamy foods like potato salad not kept cool enough.

Food allergies: are usually mediated by IgA antibodies in the gut and not the usual IgE antibodies associated with allergies that produce hives, rhinitis, swollen mucous membranes, swollen lips, etc. Instead you get gut symptoms like cramps, diarrhea, vomiting, abdominal pain, vomiting. The symptoms occur quickly and are often mistaken for food poisoning. They can't be picked up by a scratch test or a blood test.
