Duck Eggs...Why are they so good for baking?

o but i have never had a duck egg. when i was six, we had ducks and my great grandma came to visit. i had to go out to the pen and get eggs for her breakfast. i have always talked about that story... i, myself, couldn't do it then. now, maybe. one of the ladies, i sell my chicken eggs to said she would take duck eggs if i had them. but i don't even know if i have boys or girls yet or what to expect. but i have heard they are best for baking. i also have two girlfriends that do cakes on the side. maybe they would like them....
 
I got a Khaki Campbell, a Cayuga and a MagPie from Ideal Poultry last year. For months I got 3 eggs a day. I have gotten 1 egg every day up until 4 weeks ago. None for a month. Then two yesterday.

I have 2 Runner ducklings coming this week. I have people who request all duck eggs and sell them for $3.00 a doz.
 
I pay $4 a doz for duck eggs from my health food store. They are yummy. I almost say that baking with them is a waste. I lov luv love an over easy duck egg on toast. The Yummy yolk is yummy. If I use the eggs for baking I won't get my breakfast.
 
They will lay for years, but I think production drops off after year 3. I don't think it is a steep drop, but I guess I will find out when my ducks get that old

Wow, so duck lay good for three years and chickens lay for 2?

Looked it up in Holderreads: "With good management, Lightweight Breed pullets begin laying at 17 to 24 weeks, while pullets of the larger breeds typically commence laying sometime from 20 to 30 weeks. Ducks lay the greatest number of eggs in their first year of production, but normally show only a minor decrease in productivity during the second and third year when eggs are larger in size. Goood producers often lay some eggs until they are 5 to 8 years old."

Wow, I just finally got to get on here tonight...Guess I started quite a conversation. I'm so glad to find out they're so good for baking and eating. I've got 6 Khaki Campbell's in the incubator now...I'm hoping most are females. I'll have awhile until they start laying, but I'm glad to get the info. I knew you guys would come through for me. Looking forward to some duck egg omelettes.

Has anyone ever made a souffle, frittata or quiche with duck eggs. Those are my favorite egg dishes, but someone mentioned earlier in the thread that duck eggs would not work for meringue, so I wondered if they would work for recipes in which you incorporate beaten egg whites- souffles and sponge cake most specifically.

My husband thinks they are best sunny side up with toast. I made a brioche style pizza dough with duck eggs last night and it was fantastic!

That is what duck eggs do, I am not shure if it makes a difference in flavor of finished product, I never compared side by side chicken egg based baked goodies to duck egg based.

On the downside duck eggs are reported to contain more cholesterol.
