Duck processing questions

I've never eaten duck before - EVER.

My father owned a farm in Africa when I was a little girl, and they processed a whole FLOCK of ducks - I refused to eat them, as I'd SEEN them alive.

Keep in mind that muscovy doesn't taste like mallard.

Sandra, I've read that scovie tastes richer and has a finer texture than other duck. Some have compared it to a fine veal. Your opinion and comparisions to other meat would be appreciated since you have first hand experience. Thanks!​
