Muscovy is our choice! We had a hen hatch 22 out of 23 eggs last spring! Way to many, but our freezer was full! They are good mommas and will hatch anything you put under them!
We breast them out, and mostly grill the meat like steak, and if you didn't know it was duck you would swear it was steak!
It is leaner than turkey.

Brenda,
Slice the breast thin - about 1/4 inch thick and use in a stir fry with some green onions, fresh mushrooms, garlic and serve over rice. very good

Grill them and cover with fresh blueberries that you cooked down with a little sugar, lime, and rum or vodka. Served with red potatoes and grilled asparagus. If cooked right it’s fit for a king.

I just wish I could figure out how to do flagra (sp) on the farm. I’m too cheap to buy it and the kids love stuff like that.

We hatched 40 this year and will go out to pond when it gets worm.

We take the leg 1/4's and debone them and make duck sausage. Between the breast and the legs that about it for a duck (meat wise) unless you want to cook it down for soup.

Deb,
You should have said something to us. Paul could have taken you a breeding trio of 'scovies. White feathered so the pick clean. Heck of good layers for more ducklings for freezer and/or for your wonderful baking!!

Nuttin beats duck eggs for cakes and breads!

your loving SIL ...
