Dude with a biscuit problem

Good lord you guys are ambitious with your biscuits! Makes mine pale in comparison.... But....

Mawmaw's drop biscuits
3 cups self rising flour (approx, don't usually measure, SR flour is the key with these though)
Buttermilk (or 'sweet'/whole milk is fine)
Greased round cake pans, preferably bacon grease

start by dumping flour into mixing bowl and start adding the butter milk, mixing/adding until you get a super thick sticky batter that mostly clings to the spoon. Spoon out heaping spoon fulls into dusting flour and make sure you get flour everywhere on it and your hands. pick up batter and roll into a ball using the palm of one hand and the thumb/little finger of the other (really hard to explain this honestly). Set in pan and continue until all batter is used, put these balls right next to each other touching and slightly tap the tops with your knuckles to make a semi flat surface. Brush with oil and set in 350 oven for about 30 minutes or until the tops start to brown.
I've had all recipes and types of biscuits but I always come back to these. Always.
 
Does no one else use a cast iron skillet to bake their biscuits?

Buttermilk Biscuits

Preheat oven and your 10" cast iron skillet to 400 degrees.

2 cups flour
3 teaspoons baking powder
½ teaspoon baking soda
½ cup frozen butter cut into pieces
Pinch salt
¾ cup buttermilk
2 tablespoons sugar

Cut butter into dry ingredients. Add the buttermilk slowly because you may not need it all. Mixture should be wet but not too loose that it won’t hold together. Don't over mix.

Pat mixture out to ½ inch thick. Cut with round cutter (I use a 2" cutter). Arrange biscuits in the skillet. If your skillet is not properly seasoned you may need lightly grease skillet with butter after it has preheated. Be careful the skillet is VERY hot. Bake biscuits for about 15 minutes. Makes approximately 10-12 biscuits.

If you choose not to use a skillet these will spread slightly. They can be frozen.
