My mother, who knew everything, told me "just wait until the garbage truck goes down the alley and all your eggs have blood spots in them. I have had one egg with a blood spot in all these years.

A gal at work didn't want home grown eggs because she was grossed out by the blood spots.

Where are these blood spots they are so concerned about?

A lady at work told me that green eggs are lower in cholesterol. !

Martha Stewart said this on one of her shows (something like "I prefer my Araucana eggs because they're lower in cholesterol") and the myth hasn't died....

Of course, last I heard she was off onto marans eggs for their superior creamy texture. At some point I'm pretty sure she'll discover duck eggs for baking.

Every so often one of our hens will lay an egg with a blood spot in it...just a tiny one about the size of a pencil dot. If you want to see more about it, check out this article. The one pictured is much larger than what we've ever seen.
Oh, and we don't have an alley for a garbage truck to drive down, so I'm pretty sure that's never caused a blood spot for us, lol.

They are lower in cholesterol, that's why you can eat green eggs with fatty ham..
