I can't help you. I read that several years ago and the cited study has no doubt been debunked since. Maybe more than once. All I can tell you is that I read about the blue eggs being lower in cholesterol in the newspaper and in a food column or two and I remembered it because I thought it was interesting. I mentioned it here just to point out that the ee seller in question didn't just make that up. He/she read it probably the same place I did. You might try googling blue eggs and cholesterol and see what, if anything, you come up with.
The reason behind this could be because blue eggs are not produced commercially. They would be "backyard chicken" eggs, and therefore much healthier. I've heard about the brown eggs being healthier as well. The color of the egg doesn't make it healthier, the living conditions of the hen do though.

It is, and I have no idea how to make macaroni noodles, but fresh noodles made with duck egg are good enough not to add the cheese.

Then there's my BIL who really likes my eggs but was having difficulty peeling his hard boiled ones. I brought him my oldest eggs and told him to wait a week. 

He figured he was just doing it wrong.

There's a thread around here that talks about how to make fresh hard boiled eggs. Apparently you can bake them and they peel just fine. Probably has to do with letting moisture out of the eggs (which is what happens when the eggs get "old").

Place the eggs in cold water
Bring to a boil and put a lid on top
lower the heat to a slow boil for 4 minutes
turn of heat and let sit for 6 minutes
remove the water and cover with ice
When the eggs are cool, store in a zip lock bag un pealed

The eggs will peal fairly well the next day. I peal them as I eat them. Pullet eggs are the hardest to peal.

Forgive me if this is just difference between the American and British version of English but macaroni is a type of pasta, noodles are not pasta.

We call all of it Noodles.

There are two types though. Egg noodles and Italian Pasta. The biggest difference is the type of Wheat used. The Italian Pasta uses Red Durham wheat while egg noodles use regular flour. Egg noodles are good for dishes liken Stroganoff.

to us pasta (Italian)is called pasta and noodles are a different food, they are of Asian origin and usually eaten with a stir fry, soup or sometimes curry. Egg noodles are not the only type of noodles we eat though, I would often have rice noodles and buckwheat noodles.

Soba noodles and other oriental types. There are so many types of noodles!

Here in California we grow a lot of types of Rice too.

We make "noodles" from anything that comes in handy and call them noodles. Whether it's semolina flour or AP flour. Either way. Homemade is much better than store bought.
