peel and slice potatoes in rounds no more than 1/4 inch thick ....boil until not quite tender or done. allow to cool . make a fish type batter...like flour, water ,salt and pepper or a beer batter (using beer instead of water) make it thick. heat oil of choice and dip each potato slice in batter and drop in hot oil...fry until golden. YUMMY crispy and great with ketchup
