Easy Morning Egg Bake - Quiche?????

9x13 pan ungreased.....
Thaw out shredded hash browns
put hash browns in pan 1/2 deep
put a layer of moz & ched cheese
another 1/2 inch hash browns
another layer of cheese
half an onion chopped spread around the top
crack a dozen eggs and whisk till all mixed together (extra large or use more if it isn't enough)
pour into 9x13 filling in all areas.
Cover with cheese again
Bake at 350 till top of egg in casserole dish is firm. Toothpick ran through should come out relatively clean cept for the cheese.

Cut into squares - Cover with a generous helping of home made salsa

Makes about 8 servings for breakfast.
 
I do this with only one layer of hash browns, but I put in bacon,and sometimes spinach or brocolli. Not often though, cuz for some strange unexplained reason, my kids don't like quiche. It's a texture thing I think. So hubby and I have it occasionally, and they can fry themselves and egg.

my kids have been bugging me to do this actually. They think I should open a restaurant. Of course I've always wanted to do so.

Boyd, sounds like what I call a Frittata. It's like a quiche with out the crust. I like to make it on the weekends and add veggies and meat that I have left over from the week before. I usually make it in a cast iron skillet. Very Very Good!!!
