Eatin Wild things? Racoon cooking??

I have eaten deer, deer heart (cooked), squirrels, wild rabbit, wild hog, javalina, wild turkey and rocky mountain oysters. ( I was tricked into eating that)

I have had "calf fries". They tasted okay but I didn't like the texture, too soft. Rooster fries would be just as good and a fairly grown rooster has big ones!
 
In my area all you gotta do is wait until dark, light up a cigar and pour yourself a whisky. Wait for the coons to come to you, and the DO !! They come around for any scratch or other food we left for the chickens. They like egg layer pellets. Of course eating coon, sheesh man it'd take me drinking a LOT of whisky for me to eat coon. To me it's a pest, roadkill at best.
Have you been around live hogs? Nothing much dirtier than that but chickens are about as bad. They will both eat dead stuff. lol Not sure but I believe coons are cleaner than both of them. Your chickens would eat you! lol
 
Here at home in Texas as a teen we used to have wilderness survival camp-outs, about 4 to 8 of us would go out at a time. 7 days in the woods with a knife, canteen, crude fishing gear, a small blanket and a backpack. We took food for 3 meals, so we had to catch/forage/kill whatever we ate, or go hungry. Hunger sharpens your senses, and broadens the variety of what you will eat, I ate some things I wouldnt have otherwise eaten. But it is good to be able to eat, in a bad situation.

Squirrel, or rabbit are a delicacy, I eat them at home too. All birds, are good except birds that eat only fish, they just taste like fish, and bird, it;s just so funky and too strange, but better than being hungry. Raccoon is good like chicken or rabbit, opossum tastes wild, and greasy rough to eat. Then I lived in Europe for a few years and once I ordered a steak, it tasted off, a new grassy, almost sweet taste. Not that is was bad, it was just so different. After I ate it I was told it was the freshest horse I could get. Lesson learned, I didn't like it, but it turns out to be popular over there in many places. Bear, I have had steaks, and sausage, both were world class, really really good. I love deer, and elk, I will eat it over beef. Rattle snake tough, not too much flavor, alligator is about the same. Other than seafood, pork, and beef that is about it.

Great post. I would have loved doing those wilderness survival camp-outs that you did as a teen. That would be great for everybody to do.
 
I tried a neighbour's caribou sausage from his Aaskan hunt last year. Best sausage ever!!! Had elk sausage too, but not nearly as good. We hope to try venison this fall for the first time. We have deer we can hunt on our 15 acres. :)
