eating old roosters

Hi all,
What do you think about eating 17 month old RIR roosters? I have three 17 month old roosters that I would like to butcher and just hatched another two roosters along with 4 girls. Have they gotten to tough? What would be some good recipes?

Pressure cooker and then make soup is what we do with older birds rooster or hen.
