eating undercooked eggs

To me, a fried egg is supposed to have the yolk fairly runny.
I've never understood why Anne, my wife, intentionally eats a fried egg that's cooked with the yolk broken and hard. Geesh, why not just scramble the thing if you're going to do that.
 
I suspect most of us have been exposed to salmonella so many times we are basically immune to it. I have no scientific evidence, of course....
 
I wouldn't worry. You are in good company! In our house overcooked eggs, meaning cooked without any runnyness go the the dog. It is more about temperature than consistency.
 
We love our yolks runny as well. In fact, my parents fed us sunny side up eggs from the time we were old enough to eat solid food. My siblings and I (4 of us) are all still living and healthy.

I prefer overlight to sunny side up now. Also love poached and soft boiled. Have you tried them 'cottled'? That is to poach them in milk rather than water....soft runny yolk of course. The milk gives the whites a creamier texture than water does.

Melinda Lee says to crack the eggs on the counter so the shell is not pushed inside. There is no salmonella inside the eggs, I guess.
 
Ok Kim, tell me how to cottle and poach an egg; especially the poaching in milk...it sounds so yummy!!!

about the only thing I know how to do with an egg is scrambled, fried, or boiled!
 
I poach a half dozen at a time, soft and runny, put them all on a slice of 7 grain bread with salt and pepper, chop the whole works up and wolf it down for a snack about lunch time. Been doing it for yrs. and am healthy as a horse. Good Luck Woody
 
The overreation by regulatory agencies and medical profesionals is because of the way big business has used eggs in the past. The prime example is eggnog where commercial production makes batches with thousands of eggs. Just one bad egg in a large batch can then get a lot of people sick. Also commercial egg operations are usually less sanitary than a well tended backyard coop. To make matters worse they then have to wash the poo off the eggs removing natural bacterial proteins which predisposes the eggs to growing bad bacteria.

On the subject of immunity yes many healthy people are immune to some strains of salmonella and other pathogens but this does not give you generalized immunity. Exposure to a pathogenic strain you are not immune to will likely make you ill.
