You've got very neat-looking birds! As they're some sort of cross, I'm not an expert on gender ID. However, I can now spot Black Copper Marans within about two weeks of hatching, which is an amazing feat, as they're notoriously difficult. I would say that I suspect you are right with Dixie and Amber. I know demeanor can't be shared over the internet, but I also find, at a young age, my male birds are far more amenable to being handled and the females freak-out and want to be released immediately. Last, pau close attention to the cobs. A comb that takes forever to grow and turn red is a great signal that the bird is likely a pullet. Roos are a bit like people... we men seem to need to strut our stuff earlier and in a more flashy manner. Girls in the chicken world are more likely to develop those traits more slowly and my guess is that they will get their groove on no matter what.
