Mr. Dick Roosenberg went to the peace corp in Africa, after peace corp...... law school, did not care for it, started teaching Ox Driving and the school has continued to expand

I've always been intrigued by farming with draft animals.
The guys that cut timber on our farm used a team to pull the logs out of the woods. I spent a lot of time watching them work.
They do a lot less damage on slopes than mechanized methods.

That sounds wonderful. Mashed sweet potatoes with coconut.
ok.
@ChickenCanoe Not for Thanksgiving, but have you ever tried garlic on your sweet potatoes? I thought it sounded gross when my friend who is a diabetic suggested it, but is is actually a pleasant different way to have sweet potatoes in place of baked potatoes as a side dish.

Sounds like time to say a prayer for Costa Rica and the surrounding areas.

We use sweet potatoes much more than regular potatoes these days. Garlic sounds like a good idea.
We use them baked and for fries. I don't think we've had anything but sweet potato fries in at least a year. We don't deep fry them either, oven baked. I did buy a big bag of fingerling potatoes at Soulard Market Saturday. They were $1. 3 mangoes for $1. 8 limes for $1. 5 heads of lettuce (red leaf and romaine) for $1. 3 honeydews for $1. Lots of other deals too.
I love going there on Saturday afternoons. They're closed Sunday-Wednesday so anything that won't keep, they discount heavily.

I'll be tracking the storm closely as I bake. I have lots of friends there all over the country.
Thanks for the reminder. I should e-mail them today while they still have internet.

they bought a "dairy shorthorn" calf from a guy in MO (maybe buys from him regularly)

I also like the idea of more obscure breeds of cattle, especially dual purpose.
I liked shorthorns when I was growing up.
Now, if I have cattle again, I want to try Dexters.
Probably hire someone to milk because I'm not sure I want to be tied to that schedule.
