I don't have a clue about which egg will hatch first. But too much humidity can cause trouble. I would leave that factor alone if your meter is accurate.
Just an opinion. I am not a doctor, but I play one on tv.

So far the steps I did was remove the turner and place the eggs on their sides with the lowest part of the air cell facing up. I covered the mesh bottom with a sterile non slip porous cloth. Maybe that is preventing the humidity from going up?
 
Obviously, that's not a union shop. I don't like unions for the most part, but one would certainly be a help in this case.
Have you checked any further into jumping ship for another outfit, or they all pretty much the same in that area?
I am waiting till after my vacation to tackle changing my job. I will likely need a few weeks to catch up financially and look around. I am considering waiting till October when I get three weeks of vacation. Then I could take a week off and try the new job.

Yes ,one of the main factors influencing evaporation is the S/V ratio, surface to volume ratio.
If you take 2 bottles with 1 liter of water in each one of them.
The first you leave it as is and the other you spill the water on the ground. Which one will evaporate faster? (When ofcors the the temp, and the humidity are the same.)

It isn't so much the volume of water but the surface area that affects humidity. Sponges in the reservoir can help expand surface area.

To concentrate it so it tastes more like a real popsicle instead of frozen fruit juice.

Their prices are eye-twitching, eh? There's a reason I made my own; and that reason was I didn't fancy going over the hill to the poorhouse just for one of them fancy shmancy incubators.
