Smoking in a Brinkman water pot smoker. All meat hand rubbed with plain jane sea salt & freshly ground black pepper corn.
These cookers are indirect heating with the contents of the pot lightly boils and steam hydrates the meat to help prevent drying it out. This particular Ribs & Bacon slab batch is being steamed with a watered down solution of apple cider and brown sugar. The sugar will caramelize the meat to help retain moisture as it adds a sweet taste to the ribs. Usually no BBQ sauce is needed. As well as the Bacon is on the top rack and naturally basting the ribs below it..
