Somewhere I have old images of me and my siblings trying to sled down a bare rocky hill whilst it was flurrying. I think it was taken about October... we all got pretty excited about winter then. It meant sugar on snow, skating, fun power outages, and blizzards... not shovelling, trying to cook in a power outage, scraping windshields, snowsuits everywhere, and constat puddles in the entry from little feet tracking in snow.
 
How long should hatching eggs be sitting out on my counter before I ship them? If I sold a dozen and am only getting 4 eggs a day, I would have to wait 3 days to ship them so I could get a full dozen. Which means a lot of the eggs would be sitting out a couple of days. Is that ok?

Viability drops significantly after 10 days. 3 days old + 3 days shipping +1 day of rest would put them at 7 days old. I would not go any older. Also, it can also help to disclose the "maximum possible age" of eggs at shipping time to potential customers.
