The meat was dark like that because it was allowed to live a chicken life. It wasn't confined to a small space where it doesn't get to use it's muscles. The first cockerel that we ate was almost all dark meat as well.Not real sure. I'd never seen dark meat in a chicken, for one thing. Maybe due to the BCMxRSL cross? And, for being cooked as long as it was, I'd have thought it would've been a bit more tender. Funny; DW wouldn't even eat any 'cause she'd watched it grow from a hatchling, yet she'd be the first to tell you that the lower animals were created to provide food.
