What variety is that?Our Jerusalem artichokes did very well and I liked the flavor. Very much like an artichoke. I lost them due to neglect but I'm trying again with a red variety that's supposed to be less knobby.
Todah rabah Benny.2 tbs butter
2-3 tbs of vegetables oil, olive oil is the best
1 sherded onion
1 leek only th white part, sherded.
3-5 garlic cloves
1 kg of clean pealed and cut Jerusalem artichoke
2 medium pealed potatoes
200-250 cream for cooking
1 liter of water
Thyme
2 ts of salt
White pepper
Some nutmeg not to much!

Put the butter and oil in a pot, add onion and leek and thyme, stirring for t minutes, add the garlic,potatoes, JA, and stir for 2 minutes, add the water and let them cook til everything is very soft. 20-30 minutes. Add the cream and process with a stic processor or a standard food processor. Add salt, pepper and nutmeg, and eat it with a nice home made croutons.

I hope this is ok to ask..... For those who have done this: How long do you incubate Balut for? I have several coworkers interested in me incubating Duck eggs for them for Balut. Should I Just do it to their prefrence, as 1 person said he likes his only 7 to 10 days, but I have seen where some do it for 14 days or even 17!
