If I wanted to sell fertile eggs and collected them at night to ship the next day or two, where would I put them? On my kitchen counter? I heard you weren't supposed to do that?

Putting them on your kitchen counter is fine. Air cell up.

EDIT: also make sure you learn how to properly package them. nobody likes a broken egg.

You can hear all kinds of things. More popular is to not refrigerate them.
On the counter in the dead of summer, you can actually have eggs develop on the counter. It’s just not common since most of us can’t stand it that hot in the house.
Freezing eggs does hurt the embryo. I think most of us have hatched eggs that have been in the fridge. And old eggs.
I wish I could recall all the technical stuff. Check Sally’s articles on the first page. You can see how to pack eggs, and maybe find out the interesting circumstances a chick can withstand, and still hatch.
