That does look good.
How would I tell the quality of metal besides it doesn’t look rusted. It has a decent edge and I’m not really sure where it came from. Maybe my grandpa who was a butcher. But I would think the handle would have been in better shape

It is very hard yo know the features of the metal without a metallurgy lab services, but there is a simple test, if you grind it in on a sander more sparx =more carbon content, and carbon content is what you are looking for.
