What breeds are usually crossed with Ameraucanas to create easter egg chickens? Does anybody have a clue as to what the hatcheries use?
 
I think they may use some kind of game fowl. One of mine has that kind of face. But they could probably use many others, who knows?
 
I feel like mine is a jummble and has bin mixed for a bunch of years crossed and crossed again with other mixes.

Most EE's are not a direct Ameraucana cross. They've been mixed up for many, many generations. There's no telling what breeds are in their distant history, probably a little bit of everything for most of them. They are mixes crossed with mixes crossed with mixes crossed with mixes, and so on an so forth.

So mutts they are....some of my best dogs growing up were mutts...

EE's are very cool birds. They are usually selected for pretty feather colors and patterns, egg color and laying ability, and personality.
