My co-worker. I offered her an Easter egg today and she said "I didn't know you could boil fresh eggs." I said where in the heck did you hear that?!?!?

Then I took them to the GM and he grabbed one and the Asst GM believed him when he said they are laid like that. All those perty colors.

I stopped boiling fresh eggs because I found that they don't peel easily. I thought i was imagining it so I actually boiled 3 store bought and 3 fresh at the same time. I got the same results, my fresh eggs wouldn't peel cleanly.

You wouldn't happen to know why by any change?
Maybe I just have funky hens.

I have the solution to your problem!!!! When the water boils, add 1/4 cup of salt to the water and THEN add the eggs. I boil for 20 minutes because we are at 4000 foot level and my eggs are large.

Then give them an ice bath - here the tap water works because it is still in the 30's at night.

I've always brought eggs to boil in the pan. Won't they split if you add them to water that is already boiling?

I learned the most amazing egg trick from PaulaJoAnne!

Take a push pin and poke a hole in the big end of each egg. Put them in a pot, fill with water. When it boils, turn off the heat and cover for 14-20 min. Drain off the hot water, knock the eggs together to smash the shells, and douse with ice water.

Perfect peeeling! I love this method, I can finally make deviled eggs again.

I have been giving DH's boss extra eggs for years now. Yesterday I went to the shop bearing gifts. 2 dozen. Well, both the big boss and his wife were in the office when I gave them the eggs. Boss man says, "do you wash you eggs?" Before I could answer, his wife says, I'm sure she does, ewww! I said, well actually, I dont wash or refigerate my eggs. Mine I never wash, unless they are really dirty. The ones I do give away I wash, dirty or not. She seemed very relieved. I also told her I only refrigerate the ones I give away, mine never see the inside of my frige. She seemed really grossed out by the way i handle my eggs. Her hubby on the other hand was agreeing with what I was explaining to her about the bloom and everything. He had some chickens while young and they never put them in the frige either. Just the look on her face when she found out I dont always wash an egg that comes out of a chickens butt...

Do you have to sterilize the needle first? Or does putting it into the big side of the egg keep it from touching the contents of the egg? Maybe the heat from boiling the egg keeps everything clean.

As eggs get older, their air sack expands and they are easier to peel. At least, that is what I have been told.

I wonder if that is why PaulaJoAnne's pin trick works? She is letting a little air into the egg.

I put eggs in a pot, then water and about 3 tablespoons of salt and once they come to a boil, cover them and turn off the heat. Let sit in the water for 15/20 minutes and rinse/crack/peel - no problems with the shell sticking to the egg. I read that here somewhere about adding a lot of salt. Tried it for the first time last week with our fresh eggies and this is how I'm going to keep doing it

Works GREAT! Thank you to whoever had the idea
