Egg overload: ack! Ideas?

If you have extras, find out if there is a Food Bank for the needy near you. My local food bank loves getting eggs from me, Bantam eggs, Pullet eggs or regular sized xtras, they don't care.
 
Custard, pudding, pumpkin pie, toss an extra egg in to make them a little more firm

sponge cake, muffins , cup cakes can be frozen

even drop cookies the dough can be mixed and dropped and frozen on a cookie sheet with parchment paper then put in ziplock bags to be baked later. So quick and easy you could do several different kinds.

Homemade noodles use up eggs, and can be dried and/or frozen.

I make a very simple, and very delicious *chocolate mousse* - it isn't what we usually think of as mousse, as there is no cream in it, and it is more dense than fluffy - in fact I serve it in demi-tasse coffee cups! This recipe is so simple that I always have to look up the recipe to make sure I haven't forgotten something

1 cup semi sweet chocolate chips
6 eggs, more if small
pinch of cream of tartar*
1-2 Tbls cognac**

*This I think is to help it set up, but I have made it without, and its been fine. I usually use it though.
**This is optional, but it would be kind of dull without it, I think. I've never tried it, but a couple of spoons of strong coffee would probably also work well.

Melt the chocolate. Blend the eggs, cream of tartar, and cognac in a blender. With the motor running add the chocolate, using a rubber spatula to clean the sides. Pour into 6 demi-tasse cups, or other small serving dishes, and refrigerate 'till serving. Makes 6 servings.
 
You silly people, still trying to convince me that chickens lay eggs.

I am not falling for it.

I have had chickens close to a year now and this has not been the case.

Well, except for the one month that someone was sneaking onto my property and leaving an egg in the coop (very randomly I might add).

I have my suspicions.....

Yes, I only give it as a treat; between the four girls they probably get a total of 2-3 tablespoons, just a tiny little bit, a couple times a week. Glad to know I can cook up those eggs when they're overflowing out of the fridge!

Thanks to everyone for all your wonderful ideas. I cooked up four eggs, shells and all, thanks to Miss Prissy. My girls were THRILLED to get that delicious treat today; I lured them into their coop with it.

I posted on my Freecyle list and a woman who lives just down the street came and took a dozen! And lo and behold, I had two more requests come in off the list asking if they could please buy some! This makes me highly tempted to get more chickens.
