Egg Overload!

I only have three hens but the eggs I get are starting to pile up. I have given them away to neighbours and friends but even they are getting less excited by the prospect of fresh eggs.
I have never been a Baker but I am now making cakes and quiches and macarons.
Tomorrow I'm going to make a custard tart that requires nine egg yolks. And I'll make a vast quantity of meringue with the egg whites.
 
I do treat the flock to a dozen or so scrambled eggs when it’s cold. They love them mixed with some hot, wet chicken chow.

And hubby’s been experimenting with cakes and custards. And I will definitely try the cookie recipe! We even had a soufflé the other night. That uses a lot of eggs, but still.

We give them to friends and neighbors who need them, but can’t give them to churches or shelters without jumping through lots of health department hoops.

Im waiting to hear back from the county 4-H coordinator to see if she needs eggs to give to the schools for hatching. I’d love for that to happen! In the meantime, I’m running out of egg cartons!
I don't know the laws in Ohio, but I have an egg business. I get an "egg handler's" license from the "California department of food & Agriculture" that costs $50 per year. No inspections of the farm or the birds necessary. I now have the right to sell eggs here at the farm, sell them to stores, give them to the Red Cross, etc. Check your state licensing for eggs! It maybe the answer for you. :hugs

I use a silicone cupcake pan to freeze them and store in 6 packs.
I scramble / crush shells and feed them back to the girls. I Sneak in the daily ACV, garlic, and cinnamon.
 
Oh No! If you can't give them to a local rescue shelter, at least scramble them up and give them back to the hens! Or your dog, if you have one. Give them to the local Grange or a church. :confused:
This is what I do! Extra eggs occasionally go back to the chickens. I boil and then crush them shells and all. They love it.
Also I drop off eggs at an animal shelter - here we have only private ones. So the eggs are for the lady and her family. There are also Churches who accept fresh eggs.
Often I make a 12-14 egg pasta salad and give a plate to whoever I am visiting - it's nice, they like getting cooked eggs and I keep a portion for my family to enjoy as an easy lunch meal or snack. Plus, it means I can feed the shells back to my hens (I leave a little boiled egg in the shell when I scoop it out and they go crazy!). Win-Win-Win!

Remember also you can boil them up, crush them shell and all and feed them back to the girls. I under boil to try and preserve the nutrients. I've actually done this if I was a little short on feed or had huge rain.
