I heard that when you collect eggs, it is better to keep them stored at room temp. than putting them in the fridge because room temp. eggs will keep longer than if you put them in the fridge. Any truth to that or just rumor??? Thanks.

Really it depends on room temperature - some keep their homes at 60 or so and in other cases with no a/c it can get quite warm at 80+.Do you intend to hatch the eggs when you collect enough or just to eat them? Also some people believe you should leave the eggs 'au natural' and don't wash them before use because it removes the 'bloom' which protects them. Personally I think if you go through a lot of eggs daily I'd clean them off and store in the refrigerator in egg cartons.

I'm sure others will offer their opinions and advice

No, actually the opposite is true. An egg ages (on average) 7 times faster at room temperature than in a fridge. The best way to store an egg, if you want it too last long, is in an egg carton, inside the fridge. The egg carton will help prevent moisture loss.

Thanks for the info. I plan only to eat eggs, no hatching here(not now anyway).
