Lately I have read several articles on how to store your eggs. One said NOT to wash them until they are to be used. They can be stored at room temperature or in the frig. The other article said to wash/dry the eggs right after collecting them & to refrigerate them. Does anyone have any thoughts/information on this subject? Thanks!!
 
An egg looses more moisture in a day on the counter than a week in the fridge, I store mine in the fridge.
If you go through them quickly, you can leave them on the counter if your house is cool.
I only wash if they're gross.
 
I'm late to the thread again. As we have a number of people now who want our eggs, and our home is about 70ish. We store our "unwashed" eggs on a shelf unit in cartons. 6 days a wk, we collect eggs about every 2 hours and they begin to lay about 8/8:30a. We have not had a problem with eggs 3+ wks old outside of the fridge in 2+ yrs.
We have had eggs that are dirty (won't just brush off), would you wash them right away and store in the fridge? I have left them for a 2-3 days before washing. Should I begin to wash them right away?

How dirty? If it's just a bit of poop I'd scrape most of it off and then it goes in the fridge. If it's more than "just a bit" I'd put at the at the front of the line and it gets used next, so it'd be eaten before the 2-3 days you mentioned.

If it's more than a bit and I wash it right away, say within a couple of hours (I'm retired and check eggs every couple of hours), would it/they be fine in the fridge for several days?

Most likely they'd be fine, provided they're refrigerated after washing.

Truly if it was that soiled (and I've found eggs landed on poop piles under the roost) then I just scrape them clean and scramble them for the dogs, rather than chancing it.
 
Since we only have three grown hens now, we mostly keep up with the eggs we collect. When it's warmer in the kitchen, we tend to put the extras in the fridge more frequently. Or, we make some boiled eggs. I think we have a dozen in the fridge at a time. The rest are usually on the counter.
