Egg Substitute? What are they thinking?

I am looking at recipes to use for tonight's dinner. I have frozen tilapia fillets and am looking for inspiration to spice up dinner. Here is what I don't understand...


2. Place crackers in a food processor; process until fine crumbs measure 1 cup. Place crumbs in a shallow dish. Place flour in another shallow dish. Sprinkle fish with salt and pepper. Dredge 1 fillet in flour. Dip in egg substitute; dredge in crumbs. Repeat procedure with remaining 3 fish fillets, flour, egg substitute, and crumbs.

Why spend crazy money for egg substitute? Even for someone really watching what they eat, it seems to me that the minimal amount of actual egg they would use is not even worth noting.

Maybe I am wrong - but you will not find egg substitute in my house unless the Dr. says it will keep DH or kids healthier - and the Dr. better have evidence to back it up!​
 
Eggsactly!

Edited to add - the tilapia turned out perfect and I made too much so it is fish tacos for lunch - for those who stay home - - it would be too tricky to take with and prep in 30 min lunch time....
