Eggs! I shouted, I WANT eggs!

I know. We have enough eggs, but I want to have more so that I can make stuff like quiche and frittatas and omelets. :drool
I get really sick of frittatas and omelets by the time summer hits, so I'm fine without 'em until the flock's ready to get back into a regular laying schedule.

With 1 egg a day I have just enough to make meatballs or bake every so often if I feel like it, and to poach into my weekday lunch.
 
I have 3 hens who are laying, but sporadically. I have 2 pullets who lay two out of three days. And one pullet who, at 8 months old(!) has not started yet!
I had to wait 9 months for one, and looking to be the same with a couple of pullets I have right now. I got them in late spring last year, so it’s just a daylight issue + slower maturing breed problem.
 
There is hope. I got an egg from one of the hens returning to laying yesterday and I *think* I got a pullet egg, though I'm not sure because I'm expecting brown-brown, not yet another pinkish egg.
Did you wash it? My barred rocks lay "pinkish eggs" once washed and the bloom removed they are nice brown eggs.
