The remorse is gone and I'm thinking Sunday he will be served. You guys are making me hungry. I will get used to it...I have to. I have another rooster lined up. And he is huge!

I can get a bird from kill to chill (salted ice water bath).....and still flexible...in 15-20 minutes.
But when I go to final clean and part out a couple hours later it's stiff as a board, very hard to 'break' joints.
ETA: Oh and on emotion....first bird I killed my whole body trembled with adrenaline for several hours. I only do a few at a time and now after a dozen or so, it's much less but still there...as it should be IMO.
