Yesterday I poured a mixture of Epson salt, vinegar, and dish soap on my weeds. This morning I found my chicken dead, looked as though she died in her sleep. Could the epson salts have killed her?

Probably, but not likely.
She may have had some other "issue" going on.
How old was she?
How did her weight feel?
Have you ever wormed your flock?

She was about 6 months, I think she was just about to start laying. Her weight seemed ok. Never wormed her, she's the only one chicken we have.
 
Sorry for your loss.
She could have had any number of things going on, the only way to find out is to send her body for a necropsy.

Were you able to check your pullet over for any signs of injury or external parasites?

To me, it would be unlikely that the mixture you used would have poisoned her unless she consumed a lot of weeds with the solution on it.

Unfortunately, without testing/necropsy there is no way to know for sure they cause of death. There are be so many things that can suddenly take a chicken. If you do happen to lose another one in a short period of time, consider sending the body to your state lab for testing so you can have some definitive answers.

Thank you. I did not check, I just sadly buried her. I guess I'll chalk it up to nature. Thank you everyone for your help.
