Ever feel lonely when you dont have any PM's waiting for you?

I am looking forward to a very quiet weekend at home with just football, working on the kitchen and trying to get caught up on my novel. I am hoping to get out of here early today, stop by the store and not have to leave the house until bowling on Sunday evening. Now, usually things don't turn out that easy, but a girl can dream, right? In the last hour I have gotten e-mails about 2 meetings next week. My calendar is filling up fast.
 
Good Morning! I'm here! Won't be on much today. It's my sister's birthday and I'm going to go over and clean her house before she gets home from work. I'm going to have dinner waiting on her when she gets home. I have a Ribeye with her name on it, baked potato, salad, and fried green tomatoes. I finally picked out Dad's tomato plants yesterday. I have been covering them up to leave them in the ground as long as I could. They came on really late this year. I had over 50 green tomatoes on just 5 plants! I didn't think they were gonna make at all! I'm going to fry some up for Karen, make a green tomato cake and pickle the rest. Whew!

Green Tomato Cake with Brown Butter Icing

1 cake. Ingredients
•1 cup (2 sticks) butter, softened
•2 1/2 cups sugar
•3 large eggs
•3 cups all-purpose flour
•1 1/4 teaspoons ground cinnamon
•1 teaspoon baking powder
•1 teaspoon salt
•1/2 teaspoon ground nutmeg
•2 1/2 cups diced green tomatoes
•1 cup golden raisins
•1 cup chopped walnuts
Directions
Browned Butter Icing, recipe follows

Preheat oven to 350 degrees F. Grease and flour a 12 cup bundt pan.

Beat butter and sugar with an electric mixer until creamy. Add eggs, 1 at a time, beating well after each addition.

In a medium bowl, combine flour, cinnamon, baking powder, salt, and nutmeg. Gradually add to butter mixture, beating well. (Batter will be soft.) Stir in tomatoes, raisins, and walnuts. Spoon batter into prepared pan. Bake for 70 to 75 minutes, or until a tester inserted in center comes out clean. Let cool in pan on wire rack for 10 minutes. Remove from pan, and let cool completely. Spoon Browned Butter Icing over cake.


Browned Butter Icing:
1/2 cup (1 stick) butter

1 cup confectioners' sugar

In a medium saucepan over low heat, melt butter. Cook 6 to 8 minutes, or until butter is lightly browned. Whisk in confectioners' sugar until smooth.

this sounds really good. i have never heard of this cake. i will have to try it.

my MIL takes her green tomatoes and wraps them individually in newspaper and lays them in a box and puts them in a dry dark place. it takes about 2 to 4 weeks to get ripe, but it works. she will check them weekly to see their progress.
