Ever Heard of Oven Canning ???

When I was a child one of my mother's friends....a woman who was 8 months pregnant....died of botulism from some home canned ham. That was one of the saddest funerals I have ever been to. They tried to save the baby but weren't able to and the mother was holding this beautiful child in her arms in the casket.

I have a fear of home canned food that I can't seem overcome, even when I know that all guidelines have been properly followed. I don't have any problem with pickled foods or jams and jellies. I do those all the time and never think twice about it. But I can not bring myself to can any of the produce from my garden. I always end up freezing it, which takes a lot more resources to maintain. I wish I could overcome this fear but at my age it's not likely.
