Farmer's Casserole

I'm finally getting around to trying this! It is in the refrigerator now and will be baked for dinner tonight. It looks wonderful! I can't wait to try it!

This sounds so good I wish my DH would eat onions, he doesn't mind the flavor just the texture!

Can this be made without them? Perhaps a dash of onion powder instead? Please say yes!! Thanks! Genie
